October Harvest is the highest possible expression of the quality of an extra virgin olive oil, because I have made it from olives harvested before the economically viable period of maturity (the so-called correct point of ripeness, which is the moment that allows you to obtain a good quality olive oil in adequate quantities). October Harvest was born to be a great oil, without economic constraints (the yield is very low): it is produced in limited quantities, in a specific period of the year – the month of October – when the olives are still green and they contain only a small amount of precious oil.
